Chicken strips on garden salad

Ingredients

Chicken strips

0.5kg (1 pound) chicken, cut into strips

6 cloves of garlic, crushed

2 tsp paprika

Half tsp chilli powder



Garden Salad

2 cups salad greens, roughly chopped

Quarter cup green or black olives

Half cup cherry tomatoes, chopped into halves

1 small white onion, sliced

Pumpkin seeds, roasted

Sesame seeds, roasted


Salad dressing (vinaigrette)

1 clove garlic, crushed

Half cup olive oil

Half cup apple cider vinegar

1 tsp paprika

1 tsp dried oregano

1 tsp dried basil

Half tsp dried sage

Half tsp dried parsley

(Increase measures of herbs by four times if using fresh herbs)

Half tsp salt

1 tbsp. honey or jaggery


Method

Chicken strips

Sizzle chicken strips in 2 tbsp oil until golden. Remove from pan

Fry garlic until slightly golden, adding more oil if necessary

Add paprika and chilli powder and stir for 30 seconds

Add the chicken and let sizzle, stirring frequently until well cooked


Garden salad

Combine all ingredients except the seeds


Salad dressing (vinaigrette)

Combine all ingredients in a glass jar, cover and shake thoroughly to combine



How to serve

Lay the salad at the bottom of the bowl

Add vinaigrette and combine

Lay chicken strips on top of the salad

Add vinaigrette

Sprinkle with roasted pumpkin and sesame seeds
